

Due to the layout of our vines and the location of the Vineyard, our grapes are allowed to mature in ideal growing conditions. But the true magic happens after the harvest. Using the best equipment available, we cold soak our grapes throughout the fermentation process, allowing us to extract more color and flavor from every fruit and achieve the optimum sugar level for each of our varietals. We finish the process by aging our wines in new or one-used French oak barrels, adding a richness of flavor that the typical American oak barrels simply can’t match.

Collectively, they are the varietals that typically comprise Bourdeaux wines, and we’ve found that these particular grapes are well-suited to the micro-climate of the Vineyard – and our palates!
